River City Rub


 

Dry Rub

Dry rubs are the spice of life in southern bbq. Most rubs are paprika based with a variety of spices added to enhance the flavor of the meat that you are smoking. Everyone that cooks believes that he or she has the best tasting rub around. Experiment yourself and come up with your favorite. Start out with some paprika and just keep adding different spices until you come up with a taste that you prefer. This is half of the fun in bbq. There is no right or wrong way to do this. But I must warn you, as you add different spices be sure to keep a written record as you go. I would hate for you to discover the prefect blend and not be able to replicate it again in the future.

Basic Pork Rub

1/2 cup of paprika

1 tablespoon of black pepper

1 tablespoon of salt (Kosher Salt )

1 tablespoon of cayenne

1 tablespoon of garlic powder

1 tablespoon of garlic salt

1 tablespoon of dry yellow mustard

1 tablespoon of  ground cumin

(Optional): 3 tablespoons of pack brown sugar if you prefer a little less spicy taste

 

Basic Chicken Rub

1 teaspoon of sugar

1 teaspoon of garlic powder

1 teaspoon of onion powder

1 teaspoon of cayenne

1 teaspoon of dry yellow mustard

1 teaspoon of paprika (sweet)

1 tablespoon of salt (Kosher Salt)

 

Basic Brisket Rub

1/2 cup of Paprika

2 Tablespoons of Brown Sugar

2 Tablespoons of Chili Powder

2 Tablespoons of Onion Powder

2 Tablespoons of Kosher Salt

2 Tablespoons of Black Pepper

1 Tablespoon of Dry Mustard

1 1/2 teaspoons of Red Pepper
